Simple Paleo Buffalo Chicken Wings

One of my goals for this blog is to show people that eating healthy does not mean eating only granola and kale. Not even close. You can lead a life that is healthy, satisfying, and delicious! You do not need to buy a box of chicken wings, with an ingredient list that looks like this:

When you can eat these mouth watering chicken wings with an ingredient list that looks like this:

Which list has recognizable, real food ingredients? Mine. That’s right. I mean, after reading the comparison why would you ever want to buy the above!? Ick. (PS: who else is wondering what else is in the “flavour” milk ingredients and…?!?)

So I bet you want the recipe now, right? I guess an ingredient list alone isn’t going to cut it. So I will do that for you, because I love you! And because being a tease is mean.

BUT, before I give you the recipe, I just want to point out that next time you feel ‘weird’, or ‘abnormal’, or left out, or awkward, or deprived, or really anything negative whatsoever, eat these wings. It will help. I promise. You will feel so. freaking. normal. with red hot sauce smeared all over your face, and finger tips.

Simple Paleo Buffalo Chicken Wings

Ingredients
  • 1 lb Chicken Wings
  • ½ c almond flour
  • 1 tbsp Karen’s Ranch Seasoning
  • 1 egg, beaten
  • 1 tbsp duck fat or preferred cooking fat for frying
  • 2 tbsp tomato paste
  • 2 – 3 (depending on hotness desired, 2 is mild – medium) tbsp hot sauce
  • 2 tbsp coconut milk (canned)
  • 1 tbsp Karen’s Ranch Seasoning
Instructions
  1. Preheat your oven to 350. Mix together the almond flour and ranch seasoning in a small bowl, and have the egg beaten in another.
  2. Dip each chicken wing in egg, then almond flour mixture, and set aside on a plate.
  3. Heat frying pan on medium and add duck fat. Place chicken wings in pan and fry on each side for about 10 minutes total. Watch them so they don’t burn!
  4. Let them cool while you mix together the last 4 ingredients in another small bowl. Dip each wing into the sauce, coating, and then place on a parchment paper lined baking sheet.
  5. Bake for 10 minutes, flip, and bake another 5 – 10 minutes. Remove from the oven and enjoy those suckers!!!

This meal may be slightly more intensive than say, cooking a steak. However, it is really NOT that bad. It is quite worth it for one of those days when you just simply want wings. And not Polysorbate 60, caramel color, yeast extract, ETC.
